Porcini Mushroom Soup
As a student of the Institute of Integrative Nutrition, I have been discovering amazing regenerative health recipes and diets. I was thrilled to discover the numerous studies that suggest that mushrooms are probiotic. I love cooking with mushrooms and I knew that they were very high in protein but that was pretty much all I knew about them. Mushrooms truly are medicinal and we cook with them almost daily, if not weekly now. Mushrooms help our body strengthen itself and fight off illness by maintaining physiological homeostasis – restoring our bodies balance and natural resistance to disease. The compounds they contain have been classified as host defense potentiators (HDP) which can have immune system enhancement properties
This wonderful Porcini Mushroom soup is a wonderful, warming, fall/winter food – and excellent for strengthening digestion and for building the blood.
This is what I had for lunch today and it hit the spot, especially during this cold November day in Southern Ontario.
